The Little Boy, Aaron, has been saying more and more words lately. Last week driving home from work, I heard him talking. I was more tuned into the road than listening to him. But as I payed more and more attention, he was looking at me and saying dude...dude...dude. It was just too cute.
When he wants to show you something amazing he has done, he runs to you babbles out something and points. Usually he wants to show an amazing feat he has accomplished with a Matchbox car. Today as I was cooking dinner (which was so delicious by the way...recipe to follow), he came running to me yelling boo bleas, boo bleas. I gave me usual reply , ok show me. I walked into the playroom and there was Sage on her back. Aaron pointed to her and said,"boo bleas...boo bleas". He found her boobies. So we all looked at Sage's boo bleas and counted them. I can't believe that she laid there while the boys poked at her, but she did. That's how you know you have a good dog.
On a separate note, I made a FABULOUS shrimp and parsley frittata. If you haven't tried cooking a frittata, I would try this one. It's quick and simple with just a few ingredients. I made a quick simple salad and dinner was done. The boys LOVED it!
Shrimp and Parsley Frittata
6 eggs
salt and freshly ground pepper
handful finely chopped parsley
1 tsp lemon zest
juice from 1/4 lemon
tblspoon freshly grated Parmesan cheese
10 shrimp
tblspoon butter
tblspoon olive oil
1/4 tsp dried red pepper flakes
Preheat oven to 425. In a bowl whisk together eggs and pinch of salt & pepper. Add the parsley, lemon zest & juice and Parmesan. Roughly chop 1/2 the shrimp, leaving the other 1/2 whole, and add all of them to the bowl.
In a small heavy non-stick skillet, (needs to be ovenproof) heat the butter and olive oil. Over medium heat, add the eggs. Slowly stir the egg mixture for about a minute, the put the pan in the oven. Cook for 10-12 minutes, until the center is almost set (till slightly golden). Sprinkle with red pepper flakes, if desired.
